Naked Quiche

This quiche recipe is the most decadent, custard-y quiche I’ve ever come across. It’s Naked because it has NO BASE – aka “No Grains” – so it’s perfect for those following GF/Keto/LCHF ways of eating. It does call for quite a bit of heavy cream, hence it’s custard-i-ness, so if you’re not wanting that much dairy and/or fat in your quiche, you can pull back on the cream as much as 250ml on this recipe. And save your egg whites in the freezer for the GF Friand recipe! 

 Ingredients 

 Egg Mixture 

750ml cream – we recommend Maleny Dairies or Barambah Organics 

6 whole eggs – see tip below on eggs 

2 egg yolks 

1 tspn salt – we use Lotus Celtic Salt or Gourmet Organic Himalayan Salt 

¼ tspn ground white pepper – we use Gourmet Organic Ground White Pepper 

¼ tspn ground nutmeg – we use Gourmet Organic Ground Nutmeg  

 

TIP: If you cannot get eggs direct from a farmer, the best store-bought eggs are actually the “cage free” ones, because they are barn laid with plenty of room per capita per chicken. Free Range eggs that the multinational supermarket chains control, come from chickens that have so little space, they are killing each other to try to get to the feed stations, and then eating the dead ones out of desperation for food. This is inside information from a friend who used to work at one of these factory farms. 

Filling Options 

  • Bacon (sauteed), gruyere cheese, thyme 
  • Pumpkin (steamed cubes), feta cheese, thyme 
  • 3 cheeses (gruyere, brie, tasty) and fresh herbs of your choice 
  • Cherry Tomatoes, feta, basil 
  • Mushroom + 2 cheeses 
  • Asparagus + 2 cheeses 

Method 

Grease a rectangle baking dish with butter (do not use a tart base with a fluted edge, as this recipe has no base and will stick). Whisk all egg mixture ingredients until well combined. Fill baking dish first with your filling ingredients, then pour egg mixture evenly over the top. Add extra grated cheese before baking at 180C degrees or 160C degrees fan-forced for approx. 45mins or until just set. Serve as is or with your choice of greens.
